Equipment 1 9x13 Ceramic Baking Dish 1 Baker's Joy The Original No-Stick Baking Spray with Flour 1 Professional 600™ Series 6 Quart Bowl-Lift Stand Mixer Ingredients Dry Ingredients 150 grams self-rising flour 150 grams all-purpose flour 5 tsp pumpkin spice (1tbsp and 2 tsp) 2 tsp cinnamon 1 tsp baking powder 1 tsp baking soda ½ tsp salt Sugar 250 grams golden sugar (Domino Golden Sugar) 50 grams light brown sugar Wet Ingredients 225 grams unsalted butter 50 grams sour cream 75g cup 2% milk 3 whole eggs 2 egg whites (60 grams) 400 g pumpkin puree (1 can) 1 tbsp vanilla extract Cream Cheese Frosting 225 grams cream cheese (1 8oz package) 125 grams unsalted butter 250 grams powdered sugar 1 tsp vanilla extract (clear) Instructions Preheat the oven to convection bake 350°F. Grease a 9x13 ceramic baking dish with flour and butter or non-stick baking spray. Sift self-rising flour, all-purpose flour, baking soda, baking powder, and salt together in a large bowl. Whisk well together. Sift golden sugar and brown sugar together in a separate bowl. Whisk well together. Using a stand mixer, mix room temperature butter until smooth (about 2 minutes). Add sugar mixture to the butter and mix well together. Should blend into a sand-like texture. Periodically scrape the bottom of the bowl to ensure the butter mixes well with the sugar. Add room temperature eggs, egg whites, milk, sour cream, and vanilla extract. Mix well with sugar-butter mixture. Then add pumpkin puree and mix. Add the dry ingredients and mix well until combined. Pour batter into a baking dish. Bake for 30-33 minutes or until a toothpick comes out clean. I baked the cake for 32 minutes. Set aside to cool. Using a stand mixer, prepare the cream cheese frosting by mixing room temperature butter on highspeed until smooth and lightened in color (about 2-3 minutes). Add cream cheese and mix with butter until smooth. Add powder sugar and vanilla extract and combine well together. Once the cake has cooled, spread the cream cheese frosting on top of the cake using an icing spatula. Enjoy!
