Prepare a full size baking sheet pan with parchment paper. Rinse potatoes and cut with a french fry cutter. Place potatoes in a large bowl and rinse them in water. Fill the bowl with water until the potatoes are fully submerged in water. Let the potatoes sit in the water for at least 2 hours. This will help remove the excess starch in the potatoes. Drain and dry the potatoes with a paper towel or layout to air dry. Try your best at this step! Mix the potatoes with olive and salt in a large bowl. Place potatoes on a full baking sheet pan. Bake the potatoes for 1 hour and 10 minutes. Flip over the fries and bake for an additional 15 minutes so they get crispy. Enjoy!
